Boiled Corn

Well corn is in season again and my dad picked some this evening to boil. It is a very tasty and healthy snack and very high in fibre. The great thing is even kids enjoy it.
If you don't have this staple growing in your garden have no fear because it is readily available at the local markets and  even on the highways. If you don't have the time to boil it there are actually many areas in Trinidad where you can buy the ready-made boiled corn hot from the pot.

Boiling corn is no rocket science. All you have to do is shell it, wash it, break it in half and place it in a pot of water. Add some fresh seasoning (e.g.bandanya, and chive) and pepper, cover and bring to boil. The green seasoning mentioned in the previous blog can also be used. As soon as it comes to a boil add about 1 tbsp sea salt and cover again.

This usually takes 1 hour to boil. Make sure you test it to ensure the grains are cooked properly.

I am sinking my teeth into a piece right now and it is very delicious!

Remember to cook with love and good vibes.
